CHARACTERISTICS
Small shrub covered with long thorns, characterised by small white flowers and small oval leaves.
Fruits are elongated finger-shaped, adherent green skin, flesh formed inside by small translucent and crispy round-ovoid whitish vesicles very similar to caviar.
When chewed, these break apart and release a lemon-like taste.
The flavour is particularly acidic and more bitter than the other varieties.

USES
Attractive is the playful appearance of this fruit, easily used in both savoury and sweet cooking.
Precisely because of this and its good flavour, this fruit is sought after by star chefs to make their sophisticated dishes even more refined.
When used in drinks, especially alcoholic ones, it exhibits a distinct and welcome digestive property.
